What are the three qualities that we all want in a weekday night dinner recipe? Something that is quick, easy, and delicious. Maybe you could add “healthy” in there (and this meal is that as well!), but after a long day of work, most of us just want something yummy without any fuss. Salsa Chicken has been one of my go-to recipes since college. It was a great college meal because the ingredients are minimal, basic, and cheap! (How many positive adjectives can we use to describe this recipe?) I ran out of taco seasoning mix, so substituted a mix of cumin, cilantro, and cayenne pepper. Enjoy!
