This month, Real Simple magazine published a massive issue (which I am still working through) called “A Month of Easy Dinners.” Awesome! Besides the designated dinner recipes for every day of the month, there are additional recipes scattered throughout the magazine. I stumbled upon one for Bean and Cheese Taquitos, and thought it would be a perfect experiment for Mexican Monday last week. I’m always trying to learn new Mexican meals since we eat the cuisine so often.
Um, oops. I had a really hard time keeping the taquitos together! This might have been the first time I’ve ever fried something… so maybe I used too much olive oil, or maybe the little tortillas I bought were too crusty to keep their shape well. I don’t really know! In any case, the frying was tough for me!
But isn’t it funny how taking a close-up food picture makes almost any dish look good? Well, these taquitos were also the three that stayed together the best. :) I used refried black beans (with jalapeños!) instead of mashed up whole beans. I served the taquitos with all of the essentials: hot salsa, sour cream, homemade guacamole, chips, and margaritas!
