Every other post on my blog is about my favorite wine bar, Screwtop, so… surprise, surprise! Today I want to share with you all my favorite item on Screwtop’s menu: The I ❤ Grilled Cheese Sliders, described as “[their] ‘special’ blend of cheeses served with tomato coulis for dipping.” Yum! Your order comes with two heart-shaped sandwiches (I want to know who gets to eat the scraps!), and apparently there are at least four different cheeses included in the blend. Every time we have a girl’s night at Screwtop, these sandwiches always get ordered! (And sometimes they get ordered twice.)
So, I decided to make my own. :) The key was having enough of a variety of cheeses on hand. Last week, I found myself with brie, cheddar, gouda, mozzarella, and parmesan in the fridge. I shredded them all up together, drizzled in a little olive oil between two slices of bread, and sealed up the creation into my handy dandy George Foreman tabletop grill. Meanwhile, I warmed a little bit of tomato soup (thanks, Trader Joe’s!) in the microwave for dipping. Voila!
I also tried some dill sauce on the side (not a great combo), and the beverage shown is the tasty Pomegranate Green Tea from TJ’s. The overall result — although still not as good as Screwtop — was awesome! I never would have thought to combine all of those cheeses, but I think it will become a staple meal from now on. This soup and sandwich pair is perfect for a dreary day (or really any day, let’s be honest!).
