This meal represents two recent accomplishments for me: 1.) My first useful discovery on Pinterest! Everyone has been raving about Pinterest. It’s apparently the coolest thing on the World Wide Web these days. I just was not with the program… until I was browsing the “Food & Drink” category the other day, and I stumbled upon this gem of a recipe! 2.) This meal represents a WAY more successful taquitos attempt! (I’m referring to this yummy–but very messy–Mexican Monday.) Lesson learned: baking seems to work better than frying!
These taquitos are seriously delicious! Christy (the blogger who opened my eyes to taquito perfection) puts it well: they remind you at first of those “mystery-meat-greasy taquitos” that we all know and love–from college, most likely. Late night snack, anyone? Okay, I was more of a nachos girl my freshman year, but taquitos were definitely another highly desired snack.
Anyway, before you get grossed out, the recipe does bring back that familiar sensation… but obviously the filling is no mystery when you’re the one cooking! And these are fancy schmancy taquitos! I won’t even bother writing out the instructions, because the recipe here is so thorough and good. In fact, the recipe I’m referencing is already a re-post of the original. (Funny how these things work!)
I love the detailed instructions about the specific filling amount to place in the tortilla shells, as well as where exactly to place it, etc. DO follow the cooking spray and salt instructions at the end. It’s really the magic final touch. Enjoy!
