I was inspired to make jalapeño pesto after visiting Rustico to make pizza last month. It’s so easy! You can basically use all of the standard ingredients for pesto and just add a jalapeño (or two) plus a little bit of lime.
Jalapeño pesto makes a wonderful creamy pasta sauce (just add some heavy cream and heat over the stove) or regular sauce (just add some reserved pasta water).
As discovered at Rustico, it’s also lovely when drizzled on pizza. Note: this is my pizza — not as good as a Rustico pizza!
In a food processor, combine 4 minced garlic cloves, a chopped jalapeño (or two), 2 tablespoons of pine nuts, 2 handfuls of chopped herbs (try cilantro, basil and/or parsley… I prefer cilantro for this pesto), salt, pepper, a few squeezes of a lime, and at least 1/2 cup of olive oil. You will probably want to add more olive oil to get the texture you desire, but start here. All of these ingredients are flexible. Taste along the way and adjust to your preferences.
