It’s summertime, and who feels like turning on the oven? Not me. Let your freezer do the work this month, and go for this great “no bake” dessert treat. If you’re on Food Gawker, you may have already seen the recipe for homemade chocolate peanut butter cups by An Edible Mosaic. It involves lots of peanut butter, cocoa, and coconut oil – a new cooking ingredient for me. The result is incredibly irresistible. As I savored the treat in tiny bites, I felt nostalgic joy in the Reese’s Pieces-like taste, along with pure enjoyment in the richness of flavors occurring. This is good stuff. I used large muffin pans for the mold, but wished I had gone smaller when I realized the depth of taste.
I’m not a milk person, but this is the perfect recipe for a milk (or coffee) accompaniment. Enjoy!
