I attempted my first Thai-ish food dish recently in a wonderful fusion of Mexican structure and Thai flavor: Thai Chicken Enchiladas. While this is, by no means, a traditional Thai recipe, it has given me the confidence to pursue real Thai dishes at some point in the future.
I’m also inspired to come up with creative enchilada dishes of my own. If Thai enchiladas are amazing, why not Greek enchiladas? Or Chinese enchiladas? So many possibilities.
The context to this meal also made it wonderful. It had been a long work week for both Chris and I. It was Friday, and my kind husband picked me up from a lovely Prosecco happy hour which had been quite necessary to ease out of the day. Summary: We could not be more ready for the weekend. After the workday plus happy hour plus the kitchen labor, it was 10:00pm when we finally say down to eat. This treat of a dinner was well worth the wait, however!
Sauces make all the difference, and I was excited that the post referenced a specific Trader Joe’s sauce that I could easily find: Sweet Chili Sauce. Yum.
I will conclude by mentioning that the peanuts were the other most valuable ingredient. The crunch really adds a lot to the overall texture.
