Hello tomato season! I picked up five beefsteak tomatoes from the farmer’s market the other weekend, then made it my mission through the week to incorporate them whenever I could. For those of you who follow me on twitter or instagram, this “tomato series” is probably old news!
Tomato Series #1: Greek Salad from Simply In Season

1. Rub sliced bread (I used ciabatta) with crushed garlic and a drizzle of olive oil.
2. Broil for a few minutes.
3. In a bowl, stir diced fresh tomatoes, chopped basil, sautéed onions, and a dash of balsamic vinegar together.
4. Top the mixture onto the bread when it is done, and grind pepper over everything to finish.
