I was so excited to find a new version of Creamy Chicken Taquitos, one of Chris & I’s favorite meals in 2012. I can’t remember how exactly I stumbled on this recipe, courtesy of The Curvy Carrot, but may I present to you… Creamy Bean & Cheese Taquitos!
These bean and cheese taquitos look pretty much the same as the chicken ones on the outside. The inside texture is still indulgently creamy as well, but the overall taste might make the bean version the winner. As for recipe adjustments, I used a bit of Yancey’s Fancey Buffalo Cheddar along with the recommended Monterrey Jack. I also chopped up some onions and red peppers to include. Finally, I revved up the cayenne pepper!
There was extra filling the next day, so I whisked a few globs together with some eggs and milk to make a mini quiche.
